Utah has lot of national parks with characteristic red/orange rocks. We visited Arches in winter and like Bryce NP we just love this contrast of orange rocks with white snow. And we were lucky to have really nice sunrises and sunsets. If you do not have too much time one day is enough but we recommend at least 2 days.

Good place to stay is Moab. Small and cozy town. From here you have close to Arches and Canyonlands National Park.
Arches National Park has lot of easy and moderate trails.
